Buffalo Chicken Avocado ‘Toast’

Avocado toast is one of my absolute favorite dishes. I think avocado is heavenly, and when spread over toast, it’s the perfect canvas for creativity!

So, when at the grocery store, I usually pick up an avocado or two without a clear plan for how to use them (I just know I will…b/c avocados.)

In a spur of the moment decision, I decided to make Avocado ‘toast’ with a little twist. I don’t love toast (call me crazy.) I can do without the starchy carbs of bread and pasta. I don’t love the way they make me feel bloated after eating them, and I always end up being hungry about an hour later. Therefore, I opted to use lightly salted Quakers Rice Cakes as a base for my creation.

I cut my avocado in half, and spread half on the rice cake as a base. I sliced the other half to use as a topping (again…b/c avocado.) Then I topped it with whatever I had sitting around in my apartment. Since I’m relatively busy during the week, I like to make food that takes little effort and will keep well in the fridge – perfect for the “grab and go” nature of my eating habits over the past two months. The night before, I had made buffalo pulled chicken in my crockpot (crockpots save lives) because I knew it would come in handy for lunches and dinners throughout the week. I also hardboiled eggs with the same intent.

Buffalo Chicken Avocado 'Toast'

A simple + delicious breakfast, afternoon delight, or night-time snack with a ton of flavor and none of the guilt!


  • 1 avocado
  • 1 hardboiled egg
  • 1/2 c. buffalo, pulled chicken
    • Chicken breast
    • Frank’s Red Hot
  • 1. Quakers Rice Cake, lightly salted
  • Spritz of lime juice (optional)


BEFORE PREP (Time: 2 hours)

  1. Add chicken breasts and Frank’s Red Hot sauce into slow cooker. Cook on ‘Low’ until chicken is fully cooked and pulls apart easily.
  2. Set aside to cool; keep in refrigerator until use.
  3. Hard boil eggs following these guidelines by SimplyRecipes.com.
  4. Set aside to cool; keep in refrigerator until use.


  1. Cut avocado in half. Remove pit and spoon one half out of rind. Mash (with optional lime juice) and spread evenly on top of rice cake.
  2. Slice other half of avocado evenly. Lay on top of base avocado spread.
  3. Add cold, buffalo pulled chicken to one side of the rice cake.
  4. Crack and remove shell from hard boiled egg.
  5. Cut egg into slices and lay on top of sliced avocado and pulled chicken.
  6. Add additional Frank’s Red Hot on top for garnish and an extra kick of flavor.
  7. Eat and enjoy!
